The next big thing on San Diego’s omakase scene: Sushi MARU. Chef Maru (Tsuyoshi Maruyama)’s magnum opus. Chef Maru has been practicing the art of sushi for over 35 years, including two decades at the helm of Taka in the Gaslamp. His newest venture is Sushi MARU–currently in its soft opening phase, with a grand debut scheduled for May 22.

Every night, from Wednesday through Sunday, Sushi MARU will welcome up to ten diners for a seating at 5:30, then again at 8. This is a two-hour, twenty-course dinner show: Chef Maru’s knife skills are surgeon-level precise, and he shapes rice with hypnotic speed. Almost all of his ingredients are flown in fresh from Japan, though he does incorporate bluefin tuna from Mexico or Spain (whichever is freshest) and uni from right here in SD. The menu changes based on Chef Maru’s whim and whatever is in season, but you can expect soups, warm dishes, nigiri, and hand rolls.
