Local Swordfish Dinner at Vistal featuring Chula Seafood

About the Event

Join Vistal, the Baja-inspired seafood restaurant at InterContinental San Diego, for a special, one-night only five-course swordfish dinner and live demo on Friday, November 8 at 5:30pm! In partnership with local seafood sustainability stalwart Chula Seafood, this will be a night of culinary adventure, beginning with sunset cocktails on the terrace, followed by a live breakdown demonstration of a whole local swordfish by swordfish experts. Then, indulge in a special five-course dinner, featuring different cuts of the fish in each course, beginning with:
Amuse of Swordfish Bone Marrow Gazpacho made with yellow cactus fruit, farmer’s market tomatoes, finger lime, hoja santa oil, and sea salt
Next, enjoy a Swordfish Escabeche made with olive oil confit swordfish belly, mussels, padron peppers, seaweed butter toast, and paprika vinaigrette
Followed by Smoked Swordfish Collar Filled Ravioli made with kelp pasta dough, fennel, and brown butter.
The evening concludes with a Swordfish Al Pastor made with poblano polenta, pickled red onion, and pineapple butter
Followed by Espresso Chocolate Truffle Cake made with almond tuile, swordfish eye ice cream, pumpkin seed oil, and candied pumpkin.
