The whole restaurant industry is going for fast-casual, plant-based, healthier food. So it naturally makes sense that Consortium Holdings (Craft & Commerce, Ironside) goes the other way. Suckers for American traditions that are lost or dwindling, CH has opened Born & Raised, a $6.5-million, 10,000-square-foot “classic” steakhouse smack-dab in the middle of the hottest restaurant hood, Little Italy.
They’ll have their own dry-aged program, do tableside food-art circus tricks, and, yes, even a vegan option or two. The whole bar area was carved from one single walnut tree. Instead of oil paintings of old white guys, there are gaudily framed art photos of rapper Ol’ Dirty Bastard. It’s an American tradition, reimagined by the most creative restaurant group in town. Well done.
