The new Impeachmint cocktail (the spelling’s intentional) at University Heights’ Madison on Park might have a cheeky name, but its inspiration is all about nostalgia. With peaches in season, bar manager Danny Kuehner was reminded of the mint and peach iced tea his mom used to make when he was growing up in Northern California. Muddled fresh white peaches—currently in season—are the star of this light, refreshing cocktail that also includes Bulleit bourbon, mint, lemon, and club soda.
Kuehner and Madison general manager Matt Sieve had been talking about doing a regular featured cocktail and donating $1 from each sale to a worthy cause. “This one seemed so obvious,” Kuehner says. For the next month or so, while peaches are in season, $1 from every Impeachmint goes to the ACLU.
Madison has a fantastic cocktail menu (the gin-based East Barnet is a personal fave) and just launched a menu of mezcal flights, but there’s something about Impeachmint that’s so enticing.
