The pain of going to a Padres game is about to be eased. Consortium Holdings has signed on for the Wine Steals/Proper Gastropub space in Downtown (795 J Street, next to Petco Park). Consortium has created some pretty phenomenal hangouts, including Neighborhood, Noble Experiment, Craft & Commerce, Underbelly, Polite Provisions, El Dorado Cocktail Lounge, Soda & Swine and an upcoming concept at the old Ironside warehouse in Little Italy. The Wine Steals/Proper space is large, built with a second-story patio overlooking Petco’s “Park at the Park,” where pint-sized Padres fans run off their sugar-highs. It’s also a tough location. Access is down semi-secret walkway, street visibility is basically none, and the Padres only play 80 home games a year. That said, Consortium would be on the short list of operators who can overcome those odds. (Note: The name on the application says “Fair Weather” but pay no heed. It’s a corporate thing, not the eventual name of the concept.)
There is a second, very large player in San Diego’s food/drink scene who will share the space with Consortium. We’ve promised not announce their involvement for a couple of days out of respect for their people and process.
