Since launching Split Bakehouse in 2018 as a wholesale bakery, she’s earned a reputation for colorful, plant-based pastries that delight vegans and non-vegans alike. “Joy” is the word she uses to describe Split, “because at the end of the day, that’s what I want people to feel when they take a bite.”
In 2024, she expanded her vision with Michi Michi, a collaborative bakery rooted in sharing. “Leadership isn’t about holding the spotlight. It’s about creating space for others to shine,” she says. At Michi Michi, Corrales partners with local farms, bakers, and artisans to showcase diverse talent and strengthen connections across the community.
