Very Important Taco: Carnitas Taco at Cali Street Tacos

Prepare for a thick tortilla and plenty of heat-packed flavor

La Jolla’s newest taco shop may be just a few months old, but it already feels like home. We’ll thank the lovably no-frills decor and the jar full of classic Mexican candy at the register for that. And while the menu has a few experimental creations like Hot Cheeto-lote (corn on the cob dipped in Flamin’ Hot Cheetos powder) and tortillas made entirely of cheese, it’s traditional items like the carnitas taco that taste like we’re en casa.

A freshly handmade corn tortilla is stacked with a generous serving of pork—a seasoned balance of crispy on the outside and juicy on the inside—and topped with creamy guacamole, diced onions, and cilantro. No taco disassembly here; this tortilla is thick enough to keep it all together. There’s plenty of flavor in the meat alone, and though it doesn’t need any heat, the salsa bar provides some extras just in case. Try the salsa verde for a powerful kick, or salsa roja for something smokier.
