Sweet Spot: Classic French Pastry Reaches New Heights

A classic French pastry is reaching great new heights at Le Petit Bistrot, a recent addition to the La Plaza La Jolla complex. The brainchild of Executive Chef Theivan Luce, Bistro’s twist on the tarte tatin begins with elaborately spun sugar that serves as a “caramel crown” for the base of warm puff pastry, crumble, and thinly sliced apples, along with a scoop of ice cream and butter salted caramel on the side. The tarte tatin is made to order, but 10 minutes is a small price to pay for this pièce de résistance.
