If Blue Bridge Hospitality wasn’t officially the most ascendant group in Coronado, they are now. Blue Bridge is the young group behind a Leroy’s Kitchen + Lounge, plus Village Pizzeria, MooTime Creamery, Lil’ Piggy’s Bar-B-Q and Coronado Coffee Company. Earlier this year, they brought on one of the city’s top chefs in Timothy Kolanko as their corporate consulting chef (“TK” was the longtime second-in-command at A.R. Valentien under Jeff Jackson). And now they’ve sealed the deal on their next concept for Coronado—a modern steakhouse called Stake.
Going into the second-floor spot formerly occupied by Ristorante La Terrazza (1309 Orange Ave.), Kolanko says Stake will be a modern steakhouse. “There’ll be no mistaking that it’s a steakhouse,” explains Kolanko. “But it won’t be a traditional, old stuffy thing. We’ll put a grooveier spin on the food.”
The search for a chef to work with Kolanko on the concept is on. Stake’s projected open is March, but predicting restaurant openings is serious tea-leaves voodoo.
