Caymus Vineyards 50th Anniversary Dinner at Sea & Sky

Celebrate the legacy of Napa Valley’s famed Caymus Vineyards with an unforgettable evening of fine dining and wine pairing at Sea & Sky, the penthouse level restaurant located atop Hotel La Jolla, Curio Collection by Hilton. Taking place Thursday, January 30th, at 5:30 pm, guests will enjoy a five-course dinner crafted to complement the iconic flavors of Caymus wines and set against the stunning backdrop of the Pacific Ocean.

In honor of Caymus Vineyards’ 50th anniversary, Sea & Sky’s Executive Chef Ernest Lopez presents a thoughtfully curated menu that highlights the finest seasonal ingredients from ocean and land. Each course is paired with a carefully selected wine, showcasing the depth and elegance of the Caymus portfolio of wines. The evening begins with tray-passed canapés and Emmolo Sparkling Wine, followed by an exquisite progression of dishes, including:

• Scallop Crudo with Cara Cara orange, coconut, crispy ginger, and chili; paired with Emmolo Sauvignon Blanc
• Local Halibut prepared with littleneck clam, shellfish broth, tomato, and baby artichokes in a shellfish broth; paired with Mer Soleil Chardonnay
• Kabocha Squash Agnolotti flavored with parmesan cream, and fresh truffle; paired with Sea Sun Pinot Noir
• Herb-Crusted Rack of Lamb featuring baby beets, grilled chicories, date molasses, and goat milk yogurt; paired with the signature Caymus Cabernet Sauvignon ’50th Anniversary’
• Chocolate & Cherry Dessert, perfectly paired with Red Schooner Malbec “Voyage 12”

In celebration of Caymus’ landmark birthday, Sea & Sky will raffle off a liter bottle of Caymus Cabernet Sauvignon.

Tickets are priced at $105 per person, not including tax and gratuity. Complimentary parking is provided for all attendees. Reservations are required and can be made on OpenTable.com for the night of January 30.
