Chef Partner Michael Pascua was raised on Oahu, and his culinary creativity is heavily influenced by the diversity of cultures in Hawaii, including Japanese, Vietnamese and Portuguese. He enjoys being able to share his love for his homeland and his particular type of fusion cuisine with Roy’s guests at the restaurant’s flagship mainland location. “The moments we create for our guests through our food, ambiance, and Aloha-style service are incredibly rewarding,” Pascua says.
