Chefs Javier Plascencia and Adria Montaño bring the first-ever set of wheels offering ramen to Tijuana. Meet Don Ramen. Wherever Javier goes, his caja china is sure to follow. In this case, it is used to cook the incredibly tender cerdo adobado (adobo marinated pork) morsels that hang with thick ramen noodles, Enoki mushrooms, an egg soft-boiled to perfection, grilled green onions, and kimchi. Add sliced serranos to the Tonkotsu-style broth for the ideal punch of heat. Mondays through Saturdays, 1 p.m.–8 p.m. Avenida Ocampo
