Jon Rhinerson wants his restaurants to push limits while still feeling accessible to all. At Échale, Rhinerson’s first San Diego venture, he and his team went from food truck to a brick-and-mortar location in Encinitas and can’t wait to share the eatery’s next act in a new space. Serving up small plates of California bistro fare with a twist, Échale lets guests enjoy a classic Caesar salad made with Rhinerson’s mom’s own dressing—a super pungent, umami mixture of deliciousness— before turning to a Brussels sprout dish with sesame miso glaze and Peruvian-style ceviche. Add in a bottle of all-natural wine, and you’re ready for a perfect night dining out.
