Thus San Diego is seeing more and more fast-casual healthy concepts like 2GOOD2B, a gluten-, corn- and soy-free bakery and café concept that originated in Encinitas then opened a Downtown spinoff earlier this year… Word is the like-minded Tender Greens will sign a new spot in Mission Valley soon. And don’t be surprised if their chef Pete Balistreri finds a local storefront for his new line of charcuterie, P. Balistreri…. And, finally, over in Little Italy, the Broadstone building is getting Café Gratitude. The cult-loved vegan restaurant is a big hit in L.A. and Fallbrook resident Jason Mraz is an investor. It’s set for early 2015 open… It’s pretty much a given at this point: The first people to take over a failing drive-thru fast food enterprise and sell quinoa and salmon bowls and other healthy options will make a bazillion dollars. It is coming. Very soon. If I were Arby’s, I’d start replacing that metallic-looking green beef on white bread with organic chicken on ancient grain buns right now.
