“Turning guests into regulars, and regulars into family—that’s our success story,” says Nicholas Balsamo, founder, executive chef, and managing partner of Rosemarie’s Buns & Brews. The restaurant is named after his Sicilian grandmother who inspired his passion for cooking. What began as a humble food truck has grown into an award-winning local staple, built on bold flavors and a deep sense of community.

The menu ranges from the indulgent Rosie Mac—double Wagyu patties with onion confit, American cheese, Kewpie mayo, and house special sauce—to the vegetarian favorite We Have Eggplant, featuring crispy cut-to-order eggplant, Korean BBQ glaze, pickled cabbage, and Kewpie mayo. “We are the Crayola crayon box of sliders,” Balsamo says. “There’s a color for everyone.”
