First Look: À L’ouest by Chef Brad Wise

“The true French folks will probably be rolling over in their grave, if they’ve seen what things we did,” admits Trust Restaurant Group founder Brad Wise. His mild affront to francophile purists is À L’ouest, a brasserie-meets-steakhouse that arrived in North Park in February.

Inside the elegant, Art Nouveau space, Wise will serve his take on French classics: The French onion soup comes loaded with “massive chunks of oxtail,” he says. Instead of moules frites, À L’ouest cold-smokes mussels with sesame chili crunch and vadouvan, an aromatic French-Indian curry.

Despite the twists, Wise promises that À L’ouest isn’t THAT out there. “You’re going to know it’s a French place,” he says. “It’s just a French place done by us.”
