Harrah’s Resort Southern California went with that last one, revamping the former Salt & Fin space into Tierra y Mar, the resort’s new signature restaurant next to Hell’s Kitchen by Gordon Ramsay.
Derek Sola, design principal at JCJ and project lead, says his team had to completely demolish Salt & Fin to create Tierra y Mar from the ground up—literally. The Tini Bar? Adios. The fixtures and furnishings? Vayan con Dios! The very floors, walls, kitchen, and ceiling? Gone.
Now? The natural wood-lined, mosaic-laden, greenery-rich space feels like a coastal hacienda, with woven elements and artisan accents that seem surprisingly intimate in such a sprawling room. And the menu follows suit.
Considering Tierra y Mar translates to “land and sea,” specialty chef Bryan Texis highlights both as forefronts of the menu, incorporating his birthplace of Mexico City, childhood home in Baja California, and current proximity to Baja.
