Slater’s 50/50 may be best known for their all-encompassing embrace of bacon. Their signature burger patty is 50 percent bacon, “Bacon Island dressing” is a thing, and candied bacon makes its way onto the dessert menu (between, and on top of, two chocolate brownies). You can build your own burger, layering on everything from peanut butter to Spam, or go with the burger of the month — a different limited-time creation that often pushes the proverbial envelope even further. This month’s special, the Supreme Nacho Burger, ($10.95) is no exception.

Like most of Slater’s specials, the Supreme Nacho Burger may not appeal to burger purists…but if your definition of what a burger can be is more elastic, it’s is an adventure worth taking. The burger starts with a 1/3 pound beef patty that’s seasoned with taco spices and wrapped up inside a large flour tortilla with all the makings of a great plate of nachos: lettuce, tomato, cheese, bacon, salsa, black beans, onions, and guac. Next, it’s deep-fried until the tortilla turns golden brown and topped with creamy nacho cheese sauce, pickled jalapeños, sour cream, and a few corn chips, just for good measure. The final product is really more chimichanga than burger. You’ll definitely need a knife and fork.

The inspiration behind the burger came from Justyn, a Make-a-Wish kid whose favorite food is nachos. Justyn spent an afternoon in the kitchen with Executive Chef Brad Lyons, working to perfect the creation. Need another reason (besides curiosity) to give it a try? Slater’s is donating 20% of sales from the Supreme Nacho Burger right back to the Make a Wish Foundation (up to $4,000) and has partnered with Samuel Adams to match the donation.

Split between two people, it’s a messy (and delicious) indulgence that’s worth trying, even if it’s just once in a lifetime.
