The Gaslamp’s getting better. Don Chido is proof. Antonio Friscia is one of the most respected chefs in San Diego, and this is his festive, Technicolor home for from-scratch Mexican food. He’s got one of the only Santa Maria grills in the county, wood-smoking meats for tacos (carnitas, Baja fish, etc.), and big plates. His queso fundido with pepper jack and Manchego, rajas (poblanos, onions, cream), and housemade chorizo beats the hell out of three rolled tacos. The key here might be the housemade corn and flour tortillas. Or the 100-plus tequilas. Or the piping-hot mini churros with caramel dipping sauce. And if you find yourself strangely hungry after hours in the Gaslamp, they’re open late.
