The aroma of salt-tinged air blowing in from the Baja coast signals just one thing: Fresh seafood is near. And in the port city of Ensenada, temptation is everywhere. Of the many options, I always include Mariscos El Gordito on my itinerary. At this food truck, order an almeja preparada, a Pismo clam prepared right in front of you. The meaty bits of clam are doused in freshly squeezed lime juice, Maggi seasoning, hot sauce, onion, cucumber, and avocado. With flavors like that, you’ll be happy—wait for it—as a clam.
