We told you a couple weeks ago that Stone Brewing‘s exec chef Alex Carballo was leaving to front a new project. Now we know the details. He’s teaming with Jon Mangini—owner of URBN, BASIC and Gang Kitchen—to take over the El Cajon Brewing Co. (110 N. Magnolia). They’re planning to open another URBN location, only this time they’ll be brewing their own. The first batches will serve the other restaurants in the group, with expansion plans after that.
